Getting Saucy in the Kitchen: Strawberry and Vodka Sauce
This month plan-A didn’t work. I baked a chocolate steamed pudding for the Sweet Adventures Blog Hop and the end result was distinctly average and the chocolate sauce split. I tried three times, first I blamed the low fat milk, then I blamed the heat, either way the end result was not what I had in mind. Back to the drawing board. This months blog hop, hosted by The Kitchen Crusader is all about sauces. My default option was chocolate but it failed me, so I had to resort to plan-B, strawberry.
This strawberry sauce is a grown-up sauce. It’s a quick and easy dessert when all else fails. There was no time to keep on trying the steamed pudding. Two emergency runs to the shops and three atempts at the sauce was just too much which meant I almost didn’t post. But when I set my mind to something I find it hard not to follow through, so I had to post something for the blog hop.
I settled for a strawberry sauce. This strawberry sauce is not too sweet and is enhanced with a dash of vodka. Served with grown-up’s strawberry ice-cream and some chocolate dipped strawberries it is a simple, tasty, emergency dessert.
5og soft brown sugar
20ml lemon juice
Remove the leaves and hull from the strawberries, halving the small ones and quartering the larger ones. Place in a small pan with 50ml of the vodka, the sugar, lemon juice and water. Stir to dissolve the sugar. Gently boil the sauce on a medium heat for ten minutes until the liquid has started to reduce and the strawberries are soft and mushy.
Transfer the strawberries and all the liquid to the bowl from the hand mixer and whiz until smooth. Add the rest of the vodka and allow to cool before serving.
Delicious poured over ice-cream with a few extra chocolate dipped strawberries on the side.
